wrt Amro => Gardening Absolutely the last word on quince This is, 1 promise, my last word on quinces. I had a request for candied, or preserved quince, and here we go: Core, but don’t peel your fruit (brush off the fuzz). Cut in narrow slices, and cook in enough water just to cover, until fruit is soft. Drain, saving the liquid. For every cup of drained quince put in a saucepan 1 cup of sugar, and half a cup of the liquid. Cook this syrup until a candy thermometer regis- ters 230 degrees FE, or the syrup spins a 2 inch thread when dropped from the tip of a spoon. At this stage, add your quince slices to the hot sugar syrup, and simmer gently until quince is almost transparent, and most of ~ the syrup has been absorbed. Drain and roll strips in granulated sugar before spreading it out to dry. Another method would be to leave in the syrup as you would ginger. Delicious, I’m sure but FATTENING! Mustard powder mixed with cider vinegar and brown sugar.). I didn’t tell these two clever gals that, of course ... I just tried to look as though I understood what they were talking about! As a final note on this unusual fruit (the absolutely POSITIVELY, very last word) Ann Laws brought us a precious jar of her quince marmalade so we could have a taste, and I also have a letter from Edda Ross containing a delightful recipe for quince jelly. Dears, if I have neglected to mention your names in conjunc- tion with quince recipes, forgive me, please. I am absolutely quninced-out!
