Living 2 TheReview Wednesday; April 44,1990 — AI7 “Eating and living well encouraged with book given as prize Those of you who read The Review religiously from cover to cover each week (don’t we all?) may have noticed that my name was bandied about in connection with Valorie Lennox’s feature highlighting Nutrition Month. As a result of being exception- ally good recently about my fat intake, I was awarded a prize, courtesy of Saanich Peninsula Hospital nutritionist Marlyn Davis, and published by the Cana- dian Dietitians’ ~Association. Appropriately enough, it was a cookbook which they recently * published, entitled Eat Well, Live Well. fi I have to admit, I was expecting the book to contain Jectures on eating right and to have recipes with oatbran and lettuce playing a large role. Instead, I found a book which tells you “just the facts, Ma’am” about food nutrients in a way that is both understandable to the lay- person and interesting to read. The book is based on four main suggestions — eat a wide variety of foods; keep fat in your diet only in moderation; eat ‘generous amounts of foods containing com- plex carbohydrates and fibre; and achieve and maintain a healthy weight. Say the authors: “Healthy eating does not require periodic fasting or purging, nor does it insist that all bodies be pencil thin. It doesn’t § mean that a hamburger must never pass your lips or that birthday cakes be made from tofu. In short, healthy eating won’t make a mar- ‘ out of you. On the contrary, it Bans keeping you around and happy for a long time.” One thing I have gleaned as I continue to learn more about nutri- tion is that fat is the real enemy in most of our diets. The recommen- dation seems to be that we do not allow more than 30 per cent of our daily food intake to be dietary fat. Let’s suppose that your daily calorie count is 1,800 calories. Perhaps that’s a bit low for what the average Canadian consumes each day, but it will serve to illustrate. 30 per cent of 1800 540 calones. The CDA shows us how to translate this into grams. Each = gram of fat contains 9 calories so 540 calories is equal to 60 grams of fat. You know those little pats of butter they pass out in the restau- tants? Each of those contains 4 grams of fat. Fifteen of those would constitute 30 per cent of your daily food intake. Trouble is, you can certainly control the fat ~ YOU add to food in the form of butter, dressing, oil for frying and so on, but what about the fat content contained in prepared foods you purchase? Dairy prod- ucts, baked goods, and meat. Guess it means we have to start reading labels. Eat Well, Live Well also con- tains several pages of suggestions for adapting healthy eating habits to your particular lifestyle. 1 par- ticularly liked their attitude to breakfast, which many folk skip altogether. The book suggests an amazing variety of foods which would constitute a good kick-start to your day. This chapter finishes with the admonition: “If all of Canada woke up tomorrow morming and had a wholesome, nourishing breakfast, it would not solve our budget deficit; it wouldn’t get agreement on nuclear disarma- ment — but we'd be one big step closer to a healthier society.’. I'll second that. Now for some recipes from this far-ftrom-boring cookbook. Pour into large flat dish; dip both sides of bread into mixture. In large non-stick or lightly buttered skil- let, cook bread until brown on one side. Flip and cook other side. = Serve immediately with honey- sweetened plain yogurt and fresh fruit slices. Serves 6. GRANDMA’S UNSWEET- ENED ROLLED OAT COOK- IES are a real snacking and lunch- box treat. Read this and see why. COOKIE: 1 1/2 cups all purpose flour 1 1/2 cups rolled oats 1 tsp. baking soda 1/2 cup shortening 1/2 cup hot water FILLING: 2 cups chopped dates 1/2 cup water 1/4 cup granulated sugar 1 tsp. vanilla extract Combine flour, oats and baking soda. Cut in shortening until mix- ture resembles coarse crumbs. Add sufficient water to shape dough into a roll. Wrap in waxed paper, refrigerate overnight. Cut cookie dough into thin wafers (1/8 inch). Place on non-stick or lightly greased cookie sheet. Bake at 325 E for about 10 minutes. To prepare filling, cook dates, water and sugar on low heat for about 30 minutes: stir occasion- ally. Stir in Vanilla. When cookies and filling are cool, spread about 1 tbsp. filling between two cookies. Makes 3 dozen filled cookies. And, in anticipation of summer, we have ICY YOGURT POPS 1 cup low fat plain yogurt 3/4 cup frozen juice concentrate, thawed or pured fruit 3/4 cup 2 per cent or skim milk Combine yogurt, fruit juice con- centrate and milk. Pour into six or seven small paper cups. Freeze until partially frozen. Insert a woo- den stick into the centre of each, freeze until firm. To serve, peel off paper cups and supply bibs. Two thumbs up for this well- written cookbook.
