In the 1600’s, however, puritans believed that spices inflamed the passions and banned their use. During the carly days of the spice trade, spices were as pre- cious and rare as gold and just as treasured. For years the dockwor- kers of London had their pockets sewn up to prevent them from pilfering peppercoms from cargo they unloaded. Today, cooks all over the world, use herbs and spices routinely. Many of us find particular pleas- ure in going into the garden to gather thyme, parsley, sage and rosemary. We enjoy herbal teas of many kinds and it seems everyone knows of someone’s granny who cured somebody’s malady by the appli- cation of a mustard plaster or home-made herbal liniment. It’s for GLAZED PORK TENDER- LOINS 2 Pork Tenderloins (about 3/4 Ib. each) 1/2 cup Teriyaki Baste & Glaze sauce 1/4 tsp anise sced, crushed 1/4 tsp. black pepper Pinch ground cloves Mustard-Soy dipping Sauce Place tenderloins on rack in shallow foil-lined roasting pan; tuck thin ends of each tenderloin under. Combine teriyaki sauce, anise seed, black pepper, cloves together and brush each tenderloin thoroughly with glaze. Bake at 325 F for 1 hour, brushing occasionally with glaze mixture. Remove from oven, let stand 15 minutes. Cut across grain into thin slices and serve with Mustard Soy Dipping Sauce. Serves 4 to 6. Dipping Sauce Blend 2 Tbsp. dry mustard with 1 tsp. each of white vinegar and water, to make a smooth paste. Cover and let stand 10 minutes.
