Meanwhile, the juicer was put to work and produced nearly 3 1/2 cups lemon juice. The kiwifruit was peeled, mashed and cooked, then pureed as per instructions. The next step was to combine the kiwi puree, lemon peel and lemon juice and, over low heat, gradually stir in 3 cups sugar and 1 cup butter until both were dis- solved. There was a near disaster when one of the eggs I was separating tumed out to be less than fresh. Through a dextcrous twist of the wrist, it narrowly missed joiming the others already in the bowl. Of course that left only 3 egg yolks, but what the heck, they were large ones. After beating the yolks thor- y oughly, small amounts of the J s . \ fe as lemony mixture were added to them beating well each time so that the yolks would not turn to scrambled eggs. Finally all was returned to the saucepan to be cooked and stirred! for 30 minutes. Sur constantly for 30 minutes, it said. So I did. The half-hour seemed like two hours but was finally over. My wrist was lip, and still the mixture had not thickened as the recipe said it would. Using my other hand, I stirred for another 10 minutes: nothing happened. No panic, not yet Perhaps it all comes together after it’s jammed and refrigerated, said the every-positive-thinking brain. But this was clutching at straws, and I didn’t really believe it; the awful truth was dawning, I ~ had goofed (again!) somewhere along the line. Ah, the taste test — perhaps even though it looked funny, it would taste OK. With anticipation, the spoon is dipped into the mixture, lifted to the lips, blown on gently to cool it, then . . . Sip. “Yuck!” Anyone know what can be done with 8 jars of lemonade mixed with kiwifruit and butter? In tired despair I shoved the batch into the refrigerator and went to bed. Sun- day morning there was about a half-inch of hard butter at the top of each jar and a yellow-gray viscous liquid undemeath. That afternoon, my lone jar of kiwifruit jam in hand, I collected my sister and off we went to the patty. The kiwifruit jam prize was won by a gentleman who had thought- fully added tequila and lime to his recipe. J am certain that the tequila completely befuddled the judges’ integrity for I did not win a thing! The Seville orange marmalade which won had a delicious gingery touch and my sister won the Grand Prize for her Kiwifruit Chutney (with my recipe) and first runner- up for her kiwifruit jam. Our hostess, Katie, provided a delightful tea for all of us and it was certainly a pleasant way to spend a Sunday afternoon. After the contest, a check of my sister’s cookbooks revealed my dismal error; my typed recipe should have called for 5 lemons, not 15! I never was much good as a typist and now J am not sure about my cooking skills either! I wonder how that buttery lem- onade stuff would go with chicken?
