The other half of the hunt lies between gun- shot and dinner table — and that’s the. part that separates. the sportsman from the slob. Wild game canbe tender, sweet and delicious if pro- perly handled; otherwise, it may. be just expensive garbage. The main thing to remember is that body heat is the: greatest spoiler of freshly. killed game. The deep body heat of big game should’ be released as quickly as possible get the animal opened up, emptied out, body: cavity swabbed, and fur or feathers off as soon as possible. We .once wasted a prime Canada goose by not gutting it, thinking that the Decem- ber air would chill the bird until we dressed it that night. But it didn’t work that way. The big bird was wearing the finest insulated underwear in the world, and this didn’t let much 30-degree air tem- perature in or much 104- degree. body. temperature out. Result: a soured goose. _ Several years. ago helped skin /a bull elk whose tenderloins had “begun to sour..even. though the air was 10 degrees below zero. 'The bull had been promptly hog-dressed .but had lain- back in: for hours on. its: fluffy snow. The combina- tion. of insulating body “heat long enough: ‘to taint the loins. This long incision not only drains body heat faster, but makes an. easy job of mopping out blood and fluids from shot- punctured viscera. Clean, dry grass is a good mop. Birds split down the back ‘and promptly drawn and cooled can be kept without refrigeration for surpris- ingly long periods. Early one October, we kept. a limit. .-of ruffed grouse for almost a week ina cardboard box. . The birds had been split. down the backs and drawn soon after being shot, but were left in the feather. At night we would crack the back window of the station Wagon, open the box, and let the birds chill During the day, the box was wrapped ina sleeping bag. Those. grouse weré five days from gunto refrigera- tor, .but were sweet and delicious. We’ve carried pheasants for three days in late October, without spoilage, having drained body - heat from the birdsas quick lyas possible. _ Some hunters skin birds instead of picking them.
