sprayed, fertilized and generally
given the most loving care, local
blackberries positively thrive on
neglect. They are also free for the
picking, if you are brave enough!

Every country road this week
has its share of pickers who, with
visions of brarnble jelly, black-
berry pie or deep red blackberry
wine, are attacking the thorny
bushes. Some are. armed
cautiously with sturdy gloves
(but this cuts down the picking
speed), others reach into: the
unfriendly . growth - with © bare-
handed stoicism.

Along stretches of East and
West Saanich Road, land where
the loganberry, strawberry. and
other commerical crops thrive,
the blackberry sprawls. with
abandon, forming a dense hedge

products is a still, medium dry
table wine which improves with
age. The chief difficulty lies in
keeping enough hidden to build

Place crushed fruit and sugar
in a heavy crock or fermentation
vessel, pour hot water on and stir
vigorously. Add nutrient (this
helps to clear the wine quickly)
and crushed Campden tablets,
stir thoroughly. Cover wihh
plastic sheet and leave for 8
hours. Then add yeast, cover
again.

Fermentation should begin in
24 to 48 hours. Stir daily for 6 days
then let the wine rest for 24 hours.

Squeeze as much juice as
possible from the pulp, strain
wine into gallon jugs and attach

carefully, simply remove floating
fruit.

filling them. This is medium dry,
increase sugar to 4 pounds for a
sweeter wine.

Blackberries make very good
“dessert crunch” with a topping
of half a cup butter, haif a cup
flour, blended with sugar (half to
one cup) and half a cup coconut
or oatmeal, Bake this in a 350-
degree oven for about 40 minutes.

Blackberry jelly may be
concocted by boiling the fruit
briefly, sieving and. combining
the liquid with water to. make 2
cups, adding sugar and 1 tbsp.
gelatin. Serve with cream.
Blackberry. pie is a delicious
dessert as long as there are three
tablespoons of flour added to the
cup of sugar which will sweeten
four cups of fruit. This keeps it
from being soggy.
