BRITISH COLUMBIA CENTENNIAL SALMON SANDWICH
1_can (7% 02.) B.C. Salmon
', teaspoon salt
14 cup chopped apple (with skin)
‘4 teaspoon lemon juice

Mayonnaise
8 slices bread

Shredded lettuce

Mash salmon with juice. Sprinkle with salt. Sprinkle chopped
apple with lemon juice. Add to.salmon and mix well. Add
mayonnaise to moisien. Spread on 4 slices buttered bread. Top
with shredded lettuce and the remaining bread slices. Makes 4
Centennial Sandwiches.

1 can (15'z 02.) B.C. Salmon

Seasoned salt and pepper
‘1; cup chopped green onion
1 egg. beaten

Fine bread, cracker, or cornflake crumbs -

4 burger buns, split

Mayonnaise

Pickle relish

Drain salmon and mash. Add seasoned salt, pepper, chopped
green onion and mix. Add beaten egg and mix well. Make into 4
patties and coat each with crumbs.

Fry. salmonburger patty in butter until brown on one side.
Turn and brown second side. Place on toasted burger bun half.

Spread with mayonnaise and relish. Top with second toasted
bun half. Garnish with pickle.
