or flounder fillets
¥% cup flour

-4 tablespoons margarine

1 small onion, chopped
2 tablespoons flour

Defrost frozen fish until fillets can be easily
separated. Pat dry with paper towel. Dip fillets
in flour and shake off excess. Heat margarine
until foamy but not brown. Saute fillets 3 to 4
minutes, turning once. Remove from pan and
keep warm. Saute onion in remaining fat; stir in
flour and cook for one minute. Combine chicken
broth and milk and whisk into onion mixture;
continue stirring until sauce bubbles and
thickens. Pour over fillets and serve at once.
