ZIMMERMAN IT TAKES a lot of food to feed hundreds of hungry soldiers at Christmas time, but with Mass Warrant Officer Louis Du- chesne on the case, peacekeepers in Bos- nia will have their tummies full this year. Duchesne is the man who oversees the food service operations throughout the Canadian zone of operation. i With over 350 mouths to feed at Camp. Black Bear in Velika Kladusa, Bosnia Christmas dinner is no small undertaking. Being away from home during the ho- lidays is especially rough. for Canadian peacekeepers, but Duchesne’s put toge- ther a feast that is sure to please the pri- marily Quebecois troops there. Along with the requisite turkey, sold- iers will be eating Tortiere — French Ca- nadian meat pie. It’s to give them a little taste of home, Duchesne says. Also on the Christmas menu is shrimp cocktail, potatoes, honey glazed carrots and broccoli, And for dessert, nothing else will suffice but a Christmas fruit cake. The only thing that will be missing. from the Christmas feast will be egg nog. “The Enplish like that but the Francos don’t,” Duchesne says with a chuckle. But it's not just. the food that makes Christmas dinner a special event, Du- chesne says. As the troops sit down to eat their meals are served by senior officers. “It’s a tradition that we serve them for once during the year,” Duchesne says. Another custom is the lowest ranking soldier having a chance to sec what it’s like to be an officer for a night. “Usually the youngest guy in camp wears the Commanding Officer’s stripes and the C.O. wears the private’s stripes,” Duchesne explains. And irue to form for any Christmas ce- lebration there will be gifts to open. Just before Christmas three shipping contai- ners full of gift boxes will arrive in Bos- nia. Smail packages filled with letter wri- tirg paper, razors, chocolates and books are amongt the surprises for the soldiers. “It's just a little thing for the welfare of the people,” Duchesne says. It’s the little things that make all the difference when the soldiers are away from home and Duchesne knows just how much those special touches mean. This is his fifth overseas mission since 1978 and unless he gets a much hoped for vacation home, this will be his third Christmas in the field. from all of us at North Coast Tinting & Detailing.
