The easlest meal of all is spaghett!, and the first thing you

need to know is that all spaghetti is not.created equal.

Everyone is, familiar with the usual. white variety, made

from white flour.

* contain more vitamins and protein: Whole wheat - darker

and almost nutty-tasting; soy - a‘delicate combination of

‘soy and wheat (whole protein by itself! ); spinach-greenand— .

delicious; and, tomato-red surprise. All of these are really
good, although the favorite at my house is oy.
Red Tomato Sauce; (45 minutes—-2 cups) Here are the

ingredients for thissauce: Saute % an onion (chopped) and |

I clove garlic {or % teaspoon garlic powder), in 2 tbsp. oil.
Stir in 1 carrot (grated), 4 a green pepper (chopped), 2
tbsp. chopped fresh parsley (1 thsp. dried), 1 bay leaf, 1
tbsp. oregano, 1 tsp. basil, %4 tsp. thyme, | tsp. salt, % tsp.

* pepper, %4 tsp. brown sugar, 2 cups fresh of canned

tomatoes, and 1-544 oz, can tomato paste,
Simmer for 30 minutes and serve with grated parmesan

White Sauce with Mushrooms: (15 minutes~—2 cups)
Saute lots of mushrooms; large ones halved, the small ones
whole, along with 1 onion (chopped) and 1 clove garlic, and
1 tbsp. butter.

To this add 2 tbsp. chopped fresh parsley a the. dried)
and 1 tsp. HP sauce (or similar)

Stir together and add to the vegetabies, 1 cup ricotta
cheese, % cup plain yogurt or sour cream, and salt and
pepper to taste. ;

Heat and serveimmediately. Note: Ricotta cheese is like
cottage cheese without the curds andis a little tastier.

Green Veggie Sauce: (30 minutes—2 cups) Saute; 1 onion
(chopped fine), 1 clove garlic (% tsp. garlic powder), 4
tbsp. butter.

Stir in 3 stalks celery ‘(chopped fine, leaves as well), 1
green pepper, chopped fine, 2 tsp. chopped fresh parsley, 1

_. tsp. oregano, 1 tsp. basil, 4% isp, rosemary, 1 tsp. sait.

Add 1cup hot water or vegetable stock and simmer for 10 _

minutes. Blend liquid and half the vegetables in blender. -
Return to pan and heat through before serving. (Also good
without blendings).
_ Besure toserve a gréen salad with spaghetti. Try tossing
it with Italian herb dressing: 3 tbsp.-olive ‘oil,.2 thsp.
vinegar (cider is best), 2 tbsp. chopped fresh parsley, 4%
tsp. basil, 34 ysp. salt, pepper.
