SALMON RELISH SANDWICH

1 can (3-5; oz.) B.C. Salmon
2 tablespoons sweet green relish pickle

Salt and pepper to taste
1 tbsp. crunchy peanut butter (optional)
2 slices cracked wheat bread

Mash salmon with juice and bones. Blend with remaining
ingredients, Place hetween buttered bread‘slices. Makes one
generous sandwich.

TANGY SALMON SANDWICIL
1 ean (7-4 oz.) B.C, Salmon
's cup chapped raisins
14 cup orange juice
'y cup peanut butter
8 slices whole wheat bread

Mash salmon with juice and bones. Add remaining
ingredients, Mix well. Place between buttered bread slices to
make four sandwiches.

Tips for school lunches:

Place one or two sandwiches in lunch kit (depending on
child's appetite), along with celery sticks spread with a little
processed cheese. a small bag of corn chips, fresh fruit, cookies
and a thermos of milk.

Vary — by substituting carrot sticks, a small box of raisins,
cake, rice pudding in plastic container, juice or soup.

HOT SALMON BUNS
} can (7, 02.) B.C. Salmon
‘1s cup shredded Colby cheese
's cup chopped green onion
Seasoned salt
2 tbsp. salad dressing _
1 tbsp. chili sauce
_ 4 ‘hamburg buns or sesame rolls. - ~ - os
‘Mash ‘salmon with juice and bones. -Gambiie-% with. cheese,

or rolls. Pile mixture into buns. Wrap eachi “in aluminum fail.
Heal in oven at 350degrees F. for 15 minutes.
Serve with a salad of quartered tomatoes in ‘lettuce cups.
Complete the meal with applesauce, oatmeal cookies, and a
glass of milk. Makes 4 servings.

. QUICK BUDGET LUNCH
1 ean (3-95 02.) B.C. Salmon
2 tbsp. margarine .
One-third cup chopped onion
', tsp. oregano
1 can (14 oz.) small-shaped spaghetti

in lomalo sauce
': cup collage cheese (optional)

Flake salmon with juice and bones. Melt margarine in
frying pan. Add onion and oregano and cook until tender. Add
salmon, . Spaghetti, and cottage cheese if desired. Heat to boiling
point.

Serve with hot buttered toast. Complete the meal with fresh
fruit, butterscotch brownies, and a glass of milk. Makes 2-3
servings.

’ OLD FASHIONED APPLE CRUMB CAKE
's cup soft butter
's cup sugar oe
1'2 cups flour ‘
's cup finely chopped nuts
5 cups peeled, sliced B.C. McIntosh apples
2 (bsp. four
'y cup sugar
isp. cinnamon
Blend butter, sugar and flour with pastry blender. Stir in
nuts. Press '» crumbs on bottom of 9-inch spring form pan and
about ‘y in ch up the sides. Combine apples with flour, sugar and
cinnamon. Spoon into crumb-lined pan. Bake at 425 degrees F
for 20 minutes, Remove from oven; sprinkle top with remaining
crumbs, Return to oven and bake 20 ta 30 minutes longer.
