Believe it or nol summer Is
here and during the next two
months many of you may be
firing up your barbeques. When
1 think of barbequeing the
picture that comes to mind is a
juicy sizzling steak. But with
the high beef prices my image
af steak will have lo change.
For this reason | would like to
discuss the merits of Kabobs.
Originally Kabobs were
prepared by the nomads of the
Middle East wien pieces of
meat were threaded on a sword
then cooked over the open fire.
Today skewers have replaced
the sword;. barbeques the open
fire.

Kabobs can be made with a
variety of meat; weiners, lamb,
pork, and beef all lend them-
selves this cooking method. .
The meal is cut inlo small
pieces and. speared ‘on the’
skewer along with a variety of
vegelables. By cutting the meal |
and adding the vegetables you
are extending the expensive
protein. This method should
saye you a few pennies while
allowing you the pleasure of
ealing steak,

recipes are Polynesian Kabobs
and Beef Kabobs. The first is an
economical dish, easy to
prepare. To make Polynesian
Kabobs alternate 1"? pieces of
weiner with squares of green
pepper, and pineapple chunks.
Place the skewer over the
barbeque turning frequently
and basting wilh a barbeque
sauce. Cooking time, 10 to 15
minutes, :
Beef Kabobs require advance
preparalion due to the
marinating process, The beef
should.be marinated because it ,
is tenderized during this time
and also the flavor of the beef
greatly improves. Culs of beef

sirloin, parterhouse, or. rib
steak. Top round can be used if
the beef is cooked to the rare or
medium rare stage. -You can
also use chuck, but, if you da,
marinate it for a good 24 keur .

One simple itarnate-is this
basic recipe, Combine one-
third cup vegetable oil with te
cup dry red wine, Wor-
chestershire sauce , finely
minced clave of garlic, thinly
sliced onion, salt pepper,
ihyme, a bay leaf. Pour the
Hquid over the beef and allow it
to marinate overnight or longer
for the less Lender beef cuts.

To assemble the Beef Kabebs
alternate the one inch cubes of
beef with canned mushroom
caps, tomato wedges or.cherry
tomatoes, small wedges of
onion and squares of green
pepper. Baste with lhe
marinade during barbecuing.
Cook ten to 20 minutes depen-
ding on the degree of donenes:
you prefer.

Kabobs have another ad-
vantage 100. They allow the
farnily cook complele freedom.
Simply lay oul the ingredients
then let family or guesls spear
their own skewer. While each
person supervises the bar-
bequeing of his Kabob you can
sit back and relax.

Additional tips for Kabob
cookery. Dip the skewer in oil
to prevent the food from
sticking. -Leave spaces between
each piece of food so heat can
circulate. Baste the Kabobs

‘with’ a marinale or barbeque

sauce during cooking and turn
the Kabobs. frequently.
