1/4 cup chopped green
onion
2 tablespoons butter
3/4 - 1 pound fillets of sole
1/2 teaspoon salt
1/8 teaspoon white pepper
1/4 cup dry white wine
1 tablespoon flour
3/4 cup liquid Carnation
Instant Nonfat Milk
Legg yolk |
1 cup seedless green
grapes

Sauté onion in butter in
large skillet. Place fillets in
skillet. Sprinkle with galt
and pepper. Add witie. Cov-
er; boil gently 5-10 minutes
or until fish flakes easily.
Remove. fillets toi plattex;
keep warts. Cook Jiquid jh
skillet until reduced to 1/8
cup. (If liquid in skillet mea-
sures less than 1/3 cup, add
wine or water.) Blend flour
with small amount of liquid
instant milk to make paste,
Add remaining milk gradu-
ally, stirring until blended.
Add egg yolk;mix thorough-
ly. Add milk mixture anu
grapes to liquid in skillet.
Cook over mediura heat, stir-
ting constantly, until mix-
ture just comes to a boil and
thickens. Spoon sauce over
fillets; serve immediately.
