DID YOU KNOW THAT you may be having uninvited guests over for the holidays? Salmonellosis is a food-bome illness commonly traced to im- properly cooked poultry (maybe your Christmas Turkey!!!). Sal- monella is a bacterial that mulli- plies in the intestines of humans and animals. It invades the human intestine and causes illness. The bacteria is commonly found in raw poultry, eggs, meat and wi- pasteurized milk. Control is a simple matter. Just follow the basic rules for safe food preparation: 1. THAW MEATS, ESPE- CIALLY POULTRY, SAFELY. You'll have to plan several days in advance, bul the safest method is in the fridge. If you can’t manage to thaw it in the fridge, set the wrapped bird under cold rinning water until it is thawed completely. Thawing under cold running water is faster and safer than thawing at room tempera~ ture. Another methad is to wrap the bird with several layers of paper, this keeps the outside of the meat cold and slows the growth of bacteria. 2. WASH YOUR HANDS thoroughly before preparing foods and after handling raw meat and poultry. 3, AVOID CONTACT BE- TWEEN RAW. AND COOKED FOODS. Wash all surfaces that have contacted raw meat or poultry in hot soapy water as soon as you have used them. This includes hands, knives, cutting boards, trays, and all other utensils, 4, COOK THE DRESSING SEPARATELY. Basting with the juices from the pan will give it a "cooked in the bird" flavour. 5. CHECK THE INTERNAL TERMPERATURE OF THE TURKEY. .Use a meat thermometer 10 make sure, The temperature at the centre of the bird or the dressing must be 74 Celcius (165 Fahrenheit) before you consider it done. The juices should be clear with no pink colour next to the bone. 6. USH ONLY CLEAN _ Avoid uninvited guests | | atthedinnertable | UTENSILS and platters to carve. and serve meats and poultry. 7. DON’T LET PERISHABLE FOODS SIT AT ~ ROOM TEMPERATURE for more than two hours. Serve dinner as soon as the food is done and refrigerate leftovers as soon as the meal is over, Keeping food refrigerator - * cold or piping hot is oe of the best ways to fight bacteria.
