Marzipan, lebkuchen, spring-

erle, stollen and other mouth-
watering holiday treats are of
German origin. And the colour-
ful German Advent calendars
with little windows to open for
each day of the season are a
delight to children everywhere.
It is with Advent that the Ger-
man Christmas begins. Then an
evergreen wreath with four
candles is hung in many houses,
and every Sunday until Christ-
mas Eve one candle is lighted.

Denmark

In Denmark, Christmas Eve is
celebrated with roast goose, red
cabbage and caramelized pota-
toes. A special rice pudding is
served for dessert and the person
who finds the almond hidden in
it, receives a small present.

After midnight Mass, the
children put out a treat for Jule
Nissen, a small naughty and

mischievous elf, wearing wooden
shoes and dressed in red and ~

grey. If he doesn't get his treat,
he makes strange things happen,
especially in the barn yard. The
walls of the houses are also
decorated with cut-outs of Jule
Nisser (plural), often playing
with cats, mice and piglets. The
Danes don’t believe in Santa
Claus.

On Saint Lucia’s Day, Decem-
ber 13, a young girl clad in
white with a drown of candles
on her hair, followed by other
young people carrying burning
candles, awakens sleeping fam-
ilies at dawn to offer them wheat
cakes and coffee. Many people
