Demand for information on planning school lunches and snacks is an annval event. Every year, parenls become desperate for a way to make nutritious foods delicious and appealing to their kids. This year they've had a lot of assistance from two wonderful new resources: The first is Anne Lindsay's Lighthearted Everyday Cook- book. Her previous books have been terrific, but this one tops them all with its practical, easy, and fast recipes. In her introduc- tions, she discusses packed lun- ches and snacks, Her advice is sound. The recipe below is from her book. The other is a new resource on Lunches to Go, It is packed with lunch ideas that kids love, like string cheese, burritos, and new suggestions for that old standby — the sandwich. If your lunch imaginations get stumped, phone the Skeena Health Unit for a copy of Lunches fo Go. Planning the contents of your lunch bag is very similar to plan- ning the contents of a meal: chose from a varlety of nutritious foods. This goes for snacks as well. It docsn’t need to be a treat every time, So you've tried that, and you’ve discovered that your litile rascal is tossing the bag and buying pop and chips instead. Now what do you do? The answer is to involve your children in making their own lun- ches and snacks. If they put the clfort out 1o plan and/or make it, it’s more likely to fill their tam- mies rather than the trash bins. Sit down with them and have them practise planning lunches and snacks, They can choose the foods they like best. Give them the guideline that they must in- clude at least one choice from each of the four food groups in their lunch, and that snacks should also be chosen from one or two of the food groups. You might want to allow them to plan for a couple of snacks a Nutrition Notes by Gerry Kasten week that defy all the principles of good nutrition! ; Kids need your help in choos- ing foods that meet these guidelines, that are within your budget, and that can be packed safely and casily. Teenage children can learn financial lessons if you give them a grocery allowance for their lunch choices, and take them with you shopping. They'll soon real- ize that nutritious foods will leave them with change in their pock- ets, while the "junk" leaves them with nothing. Tf lunch planning becomes a batileground between you and your child, call a cease-fire and run to your nearest bookstore for Ellyn Satter’s classic book on How To Get Your Kid To Eat. But Not Too Much. Satter’s warm and humorous way of explaining why food battles happen, and what you can do about it, is a must on kids any parent’s shelf. I highly _ recommend it. Serve with a slice of low fat cheese like edam or part skim mozzarella and you’ve got a nutritious and delicious snack! Blueberry Lemon Muffins 15 ml (1 tbsp) lemon juice 250 ml (1 cup) milk 1 egg, beaten 10 ml (1/4 cup) vegelable oil 50 ml (1/4 cup) molasses 250 ml-(1 cup) natural bran 175 ml (3/4 cup) whole wheat flour 175 (3/4 cup) all purpose flour 75 mi (1/3 cup) packed brown sugar 7 mi (1 1/2 tsp) grated lemon rind 7 mil (1 1/2 tsp) baking powder 2 ml (1/2 tsp) taking soda 250 ml (1 cup) blueberries (fresh or frozen) In bowl, stir lemon juice into milk; let stand for 1 minute to sour. Stir in egg, oil and molasses. In large bowl combine brand, whole wheat and all purpose flours, sugar, lemon rind, baking powder and baking soda, Add milk mixture and blueberries; mix just until com- bined.
