OMM: Fear of entertaining NEW YORK (AP) — If you get butterflies in your stomach when it's time to entertain, you're not unique. “Partyphobia”’ is the term used by Edgar Watkins, a designer of table-top ac- cessories by vocation and a rty host by avocation. “Though few admit it,” he says, “I think everybody gets nervous before giving a party— even those who do it well.” Ways to ‘combat this anxiety are covered at length in a book Watkins is preparing. From personal experience, he advises; “Give It a whirl—like a Paivtie totake.a deep breath 2 a deep brea and dive in.” Party-giving was not exactly new to Watkins when he arrived in New York City 15 years ago. At home in Texas, hie parents en- tertained extensively, — Adapting to New York, Watkins hit upon two fun- damentals. “Specialize in things that no one else is specializing in,” he said. “And, most importantly, take a look at the area you will be en- tertaining in.” He. diccovered that his New York friends were cooking beautiful, elaborate meals. “J wasn't going to enter that sweepstakes,” he said. Instead, he would make his debut by serving regional food. “T called my grandmother and got her recipe for chili,” he recalls. “I called my aunt to find out how she did fried chicken. The beauty was if it didn’t wark out exactly right, nobody would know, since they weren't familiar with that style of cooking.” Watkins realizes that his formula is not the norm. “People who are superb cooks -might scream and faint when I say that food is considerably less important to a party than the ambiance and the chemistry between the people. - “Simple but delicious dishes, 1 find, are the most satisfactory," he says. Getting the right number af people in the right space is basic. Watkins lives in a brownstone with a small garden infront and a patioin the rear. This same dry air will attack the moisture in your frozen foods if it gets a chance. By using freezer bags that are meoisture-vapor resistant, you can protect your food from the dry air.
