B10 Terrace Review — Wednesday, April 4, 1990 ‘Who iS... Kim: Duerr? | Kim: Duerr is a chef at Ter- -. race’s Bavarian Inn. Kim is a shy - interviewee, but a progressive - and creative chef. Anyone who “has eaten at the Bavarian Inn during the past 13 years can at- test to that. The Bavarian Inn was built in 1974 by Andy Heuschling and was open for business from July to September of that year. On July 2st, 1975, it re-opened under the new ownership of Gus Gerdei and Fritz Wober. Both Gus and Fritz have been chefs for 25 years and are European trained. Under the expert guidance of Gus and Fritz, Kim Duerr ‘developed his skills as a chef. Duerr began his career at the Bavarian Inn as potato peeler and onion slicer; he confesses that he’s never attended chef’s training. He’s thought about getting his ‘‘chef’s papers’’, but then he wonders why. He knows he’s good, as do his employers Gus and Heli Gerdei (Fritz left Terrace in 1984). The kitchen staff of a half- dozen or so. people, work together as a team. Pinda & Vin- da do appetizers. Kim does the major prep cooking and soups, main courses, sauces and desserts, with the able assistance of chef Dietmar Hahne, Elmer Smidt and Vinda. Kim’s creative side like doing buffets. He ex- plains, ‘‘They’re different and creative. Cooking is something I enjoy, but with repetition, it can become tedious.”’ The Bavarian features specials every month. Heli, Gus or so- meone else on the staff will bring. in new recipes and Kim will ex- periment with them. If he likes the results, they’ll be added to the luncheon menu or be fea- tured in monthly specials. Duerr cooks at home on Sun- days, but he says he doesn’t real- ly enjoy every day cooking. His two sons, five-year-old Christopher and Andy, three- year-old think it’s great that dad's a chef. Duerr says they’re too young to think about what they’d like to be when they grow up. But, the boys like visiting Angry Housewives vent April Angry Housewives is one of the most popular productions ever done by Vancouver’s Arts Club Theatre, and local au- diences will have the chance to experience it first-hand Aprif11, when the cast storms the stage of the R.E.M. Lee Theatre. How did it come to be writ- ten? Playwright A.M. Collins has stated that it was written from her two greatest fears: fear of ‘‘becoming married’ and fear of ‘becoming stuck’’. While she was casting about for ideas, she happened to glance at a National Inquirer headline that read, ‘“‘Angry Housewives storm shopping mall’? and she was inspired. Act I was quickly completed, as were the lyrics to the show-stopping song, ‘‘Eat your F&*$%¢ Cornflakes’’. After a reading of Act I, the cast was so inspired that they began rehearsing, causing Col- lins to stay up until the wee hours, madly writing the next scene of Act II for the next day’s rehearsal. Angry Housewives was her first play. Composer Chad Henry com- posed songs for plays produced at the Empty Space Theatre, but. his collaboration with Collins on Angry Housewives was his first full-length score. Angry Housewives, on tour with the Arts Club Theatre, wil! be performed at the R.E.M. Lee Theatre on Wednesday, April 11th. Tickets are now on sale at Erwin’s in the -Skeena Mall. He starts the day making soups and luncheon specials. ‘Between 12 and | p.m. he and his staff serve the majority of their luncheon clientele. At 1, he goes home and Vinder and Diet- mar serve late lunches. At 5 p.m. Kim returns to. do dinner preparation and fill the orders as they come in. By 11 p.m., he’s - ready to go home. On Satur- days, he works straight through from 1:30 to 11 p.m. Duerr takes Sundays and Mondays off to go fishing or do woodworking. He loves building cabinets and furniture. He took a log building course once, in order to build his own log home. So far, he’s built a log shed to try out his course skills. The hobby has become a passion, but he doesn’t know if he’d ever want to do it for a living. The name Duerr is German. Kim’s grandparents came from Germany to settle in Saskat- chewan. Kim was born there and the family moved to Manitoba a few months after his birth. They’ve been in Terrace since 1968, when Kim was six years old. Prior to starting his job at the Bavarian Inn, Kim had eaten continental cuisine, but never prepared it, or even thought about how it was prepared. Thirteen years ago, he took the job because it was a job. Today he says, “If you do it well, you stick with it.’ If Kim ever decid- ed he needed a change, he'd like to try camp cooking.
