caller who gave us the following recipe for hagais,
didn't identify herself.

. HAGGIS —
1 sheep pluck in bag 1 small onion
1 teaspoon salt

1 teaspoon pepper

1 cup toasted oatmeal
Y% pound ground suet

(The bag is the lining af the stomach. Pluck is |
the heart, luna and liver of the sheep. ) i

Soak bag i in salt water to cover for one hour, Boil:
the pluck far one hour, then cool. Put heart and fungs,
through a. fine blade ‘food chopper. Grate the liver.
Dice the onion. Place meat and onion, suet and cat-
meal in a mixing bowl, Add seasoning and one cup of.
liquid from pluck,

Examine bag carefully and sew up any holes. Put
meat mixture in bag, allowing room for expansion.
Sew up the bag. Place a plate in a large cocking pot
that's filled with hot water. Immerse the haggis. Boil
for three hours, prickling accasionally with a needly
