When meeting with the three individuals it was Strongly pointed

out that the serving of french fries and hamburgers would definitely
improve the financial situation of the concession. The equipment
required to sel] hamburgers and french fries is outlined below:

STAFFING

It will be necessary to hire a head concession person‘ who will look
after stocktaking, ordering of supplies and supervision of the other
concession staff. As well as the head concession person, additional
staff will be required to serve the public. We have already had
Preliminary discussion with the union in regard to staffing, however
the actual numbers of staff hired will depend on‘ an agreement that
will be worked out with the union. The projected cost of operating
the concession for 1980 in regard to salaries will be $21,000.00 and,
in regard to Supplies, will be $24,000.00 for a total operational
cost of $45,000.00. The Projected revenue will be $45,000.00

HOURS OF OPERATION .

In order to make a successful operation it will be necessary to
operate the concession during peak hours. It is suggested that the
following hours of operation be attempted at first with possible
revisions at a later date:

Monday to Thursday : 10:30 p.m.

Friday 11:00 p.m.

Saturday 11:00 p.m.
